    Unhappy Cream Cheese Frosting

How do you get a soft texture without cheese bumps?

You have to make sure the cream cheese has come to room temperature before using it. If its cold it will make those little balls.

I beat the cream cheese and the butter together until they are well mixed and creamy (it can look a bit 'seperated' at this point, don't worry), then add the other ingredients and beat.

The cream cheese does need to be room temperature...same with the butter if you are using it. This is pretty much the only frosting I frost cakes with... and there is no way around the room temperature thing...otherwise you get the little "balls"
